A natural collaboration with the best natural wine bar in New York: Parcelle. Taken place the day after one of the biggest winter storms in NYC history, I hosted a collaboration with the team at Parcelle in Greenwich Village. The six-course tasting menu was crafted around the harsh winter and focused primarily on wild game, mushrooms, and winter preserves & ferments.
