Taiwanese ban-dou feast / Bay Area, California

On a foggy winter evening in Copenhagen, Tony Tung, chef & owner of Good to Eat in Emeryville, CA, and her partner dined at noma. When I walked a dish to their table, it became clear we shared a deep curiosity and kindred philosophy for Taiwanese cuisine. Years passed, but the connection endured, and when the right moment presented itself, we teamed up to reimagine the ban-dou (辦桌)—a traditional Taiwanese roadside feast.
