Mid-autumn kaiseki dinner / Denver, Colorado

A kaiseki inspired tasting menu, held at Stowaway Kitchen; co-created with a dear friend, Niki Robins. Leading up to the dinner, we foraged for indigenous roots, wild mushrooms, and juniper to capture the abundance of mid-autumn in the Rocky Mountains. For produce, we partnered with Minoru Farms, a fourth-generation Japanese American owned farm in Denver.
